As I’m writing this in the middle of February, the craving for warm and hearty food immediately comes to mind. This recipe was always one that warmed you right down to the core and there was always enough for a wee bit more after the first bowl.
This recipe was a close runner up in my favourites for dessert. It has been many years since I last had them so this sounds like a weekend project!
It was difficult going through all the dessert recipes and trying to find a favourite – there were so many! Do I want cookies? Squares? Pies? Cakes? I finally thought back to what I’d request for my birthday and the answer was easy.
One of my favourite holiday dishes when I was growing up was my mother’s lasagna. Yes, holiday dishes! Apart from the usual festive offerings at Christmas and the like, we also had a big tray of lasagna.
My Grandfather John Joyce was born in Llanfrynach, Wales. He was the main cook of their family and one of the traditions he passed down to my mum was that March 1st meant Welsh cakes! Have them plain, have them with butter, have them with jam – it was your choice.
